Especially on the USP 45s. What do they mean? Why are some preferred?

That would help me also. I have been reading as fast as I can(lol) but still dont have a clue about the date codes and why some are more better.

WTF is/does LEM mean?

What's the deal with the V1, V2, V3 ?

LEM means that the weapon is equipped with the Law Enforcement specific trigger. It has a very light trigger pull and some other differences compared to normal triggers

The V1, V2, V3, etc. refers to the version of the pistols. If you look in the owner manual for the HK you have, it should list all the variants and what they are. My HK45c is a V1 because it has a left mounted safety and decocker.

Law Enforcement Modification. Know in Europe as Combat Defense Action.

LEM (CDA) is a DAO type trigger with short reset. It's kind of like a Glock trigger in the sense that the pull is consistent from first shot to last, there is no transistion from DA to SA.
